Eden Kombu is a wide leafed deep sea vegetable that flourishes in cold northern waters. The choice grades grow where there are steady but moderate arctic currents. Eden Kombu is wild and comes from the north shore of Japan's northernmost island. Eden offers only the most tender central part of the leaf because it has the nicest flavor and texture. It is hand harvested, folded into strips and sun dried. Kombi is sometimes coated with a fine white powder, glutamate (an amino acid). This is what has made Kombu famous as a flavor enhancer.
