Agar Agar Flakes

Agar Agar (Kanten) is a vegetarian gelling agent from red seaweed used for over 1000 years. The seaweeds are boiled, pressed into a gel and then dried into flakes. Great for desserts, baked goods fillings, puddings, pies, parfaits, etc. Flakes dissolve in hot liquids and thicken as they cool to room temperature or below.

Use to thicken fruit juices with fruit, pudding, pie fillings, and vegetable aspics. No taste or color.

INGREDIENTS: Seaweed (Gelidium and Gracilaria).

  • To Prepare: Add 4 tablespoons of flakes to 4 cups fruit juice or stock, boil, reduce heat and simmer 5 minutes or until dissolved, stirring constantly. Transfer to mold or baking dish and add fruits or vegetables and cool until firm. Will set at room temperature or in the fridge in about 45 minutes.
