  • Cooking Instructions: Use the "shock" method to cook Soba: Boil 3 quarts of water. Do not add salt. Add 1/2 pound of pasta and stir. Upon boiling, add 1 cup water. Return to a boil again, then add another cup of cold water. Repeat once more then rinse, drain and add sauce or toss with sesame oil and mirin.
